Buy Lobster Live: Look At Its Shell

When you buy lobster live (the only way that you should purchase it!) you do need to pay close attention to the physical appearance of the lobster.  Lobsters should have several qualities about them, especially when it comes to their shell.  Here are some tips to consider about your lobster’s shell.

Look for any problems in the lobster shell.  For example, if you find that there are holes or black markings on the shell, this is an indication that the lobsters have been through a rather hectic, abusing time.  This also means that the shell hasn’t been recently shed.  Yet, this doesn’t mean that the meat of the lobster is harmed, assuming that the lobster is still alive and physically in one piece.

The texture of the shell is another indication that you should consider.  A hard shelled lobster is one that has had its shell for some time and therefore is fuller than those with a soft texture.  But, a new shell lobster will provide you with easier access to the meat and many believe that the meat is sweeter and tender more so than a hard shelled lobster.
