When buying lobster, it may be important to take a step back and realize just where you are purchasing the lobster from. The best way to purchase is to purchase lobster live as the freshness will be supreme and it will give you the best range of flavor and texture when cooked. But, there is more that you should consider when purchasing lobster than whether it is still alive, or not.
· Know your fish monger, as this will allow you to be given the best of the best when you come into the location.
· Fish, including lobster, should not smell like fish. If it does, that means that it’s not fresh, even if its still alive, it may not be freshly harvested.
· Look for a rather busy monger or supplier. That means turn around is faster.
